Parmesan-Crusted Pork Chops
Cheddar Grits and Broccoli
Ingredients
- ¾ lb boneless pork chops
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 large egg
- ⅓ cup panko breadcrumbs
- 3 Tbsp grated Parmesan cheese
- 1 Tbsp olive oil
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle pork with salt and pepper. Whisk egg in a shallow dish; combine breadcrumbs and cheese in a second shallow dish.
- Dip pork in egg mixture, letting excess drip off; dredge in breadcrumb mixture, pressing gently to adhere.
- Cook pork in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until done.

- ½ cup quick cooking grits
- ⅓ cup shredded Cheddar cheese
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- 1 (12-oz) pkg broccoli florets
Side Dish Instructions
- Cook grits according to package directions. Stir in cheese and ⅛ tsp salt and pepper.
- Meanwhile, cook broccoli according to package directions. Toss with ⅛ tsp each salt and pepper.
