Parmesan-Crusted Pork Chops

Ingredients

  • ¾ lb boneless pork chops
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 1 large egg
  • ⅓ cup panko breadcrumbs
  • 3 Tbsp grated Parmesan cheese
  • 1 Tbsp olive oil

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle pork with salt and pepper. Whisk egg in a shallow dish; combine breadcrumbs and cheese in a second shallow dish.
  2. Dip pork in egg mixture, letting excess drip off; dredge in breadcrumb mixture, pressing gently to adhere.
  3. Cook pork in hot oil in a large skillet over medium-high heat 3 to 4 minutes per side or until done.

  • ½ cup quick cooking grits
  • ⅓ cup shredded Cheddar cheese
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • 1 (12-oz) pkg broccoli florets

Side Dish Instructions

  1. Cook grits according to package directions. Stir in cheese and ⅛ tsp salt and pepper.
  2. Meanwhile, cook broccoli according to package directions. Toss with ⅛ tsp each salt and pepper.
