Greek Spinach Grilled Cheese Sandwiches
Balsamic-Oregano Tomato Salad
Ingredients
- 1 (10-oz) pkg frozen chopped spinach, thawed
- ½ cup shredded mozzarella cheese
- ⅓ cup crumbled feta cheese
- ¼ cup olive oil mayonnaise, divided
- ½ tsp dried oregano
- ⅛ tsp crushed red pepper
- 4 slices multigrain bakery bread
- 2 tsp honey
Instructions
- Squeeze spinach dry using paper towels. Stir together spinach, both cheeses, 2 Tbsp mayonnaise, oregano, and red pepper in a bowl.
- Top 2 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with 2 Tbsp mayonnaise.
- Cook sandwiches in a large nonstick skillet over medium heat 3 to 4 minutes per side or until toasted and cheese melts. Drizzle honey on sandwiches.

- 1 large tomato, sliced
- 1 Tbsp balsamic vinegar
- ½ Tbsp olive oil
- ¼ tsp dried oregano
- ¼ tsp pepper
Side Dish Instructions
- Arrange tomato slices on a plate. Drizzle with vinegar and oil; sprinkle with oregano and pepper.
