Greek Spinach Grilled Cheese Sandwiches

Ingredients

  • 1 (10-oz) pkg frozen chopped spinach, thawed
  • ½ cup shredded mozzarella cheese
  • ⅓ cup crumbled feta cheese
  • ¼ cup olive oil mayonnaise, divided
  • ½ tsp dried oregano
  • ⅛ tsp crushed red pepper
  • 4 slices multigrain bakery bread
  • 2 tsp honey

Instructions

  1. Squeeze spinach dry using paper towels. Stir together spinach, both cheeses, 2 Tbsp mayonnaise, oregano, and red pepper in a bowl.
  2. Top 2 bread slices with cheese mixture; cover with remaining bread slices. Brush outsides of sandwiches with 2 Tbsp mayonnaise.
  3. Cook sandwiches in a large nonstick skillet over medium heat 3 to 4 minutes per side or until toasted and cheese melts. Drizzle honey on sandwiches.

  • 1 large tomato, sliced
  • 1 Tbsp balsamic vinegar
  • ½ Tbsp olive oil
  • ¼ tsp dried oregano
  • ¼ tsp pepper

Side Dish Instructions

  1. Arrange tomato slices on a plate. Drizzle with vinegar and oil; sprinkle with oregano and pepper.
