Shrimp Pasta in Spicy Tomato Sauce

Ingredients

  • 12 oz linguine
  • 1 pint grape tomatoes, halved
  • ½ bulb fennel, thinly sliced
  • ¼ cup olive oil
  • 1 Tbsp crushed Calabrian chile peppers
  • 6 cloves garlic, minced
  • ½ cup white wine
  • 1 (28-oz) can whole peeled tomatoes, chopped
  • ½ tsp sugar
  • 2 lb peeled and deveined large raw shrimp

Instructions

  1. Cook pasta according to package directions; drain, and keep warm.
  2. Meanwhile, cook tomatoes and fennel in hot oil in a large, deep skillet over medium heat 3 minutes. Add chile peppers and garlic; cook, stirring, 30 seconds.
  3. Add wine; cook 2 minutes. Stir in tomatoes and sugar; cook 5 minutes. Add shrimp, and cook 4 to 5 minutes or until shrimp are done. Serve shrimp mixture over pasta.
