Shepherd's Pie Mashed Potatoes

Ingredients
- 2 lb lean ground beef
- 2 (12-oz) pkg frozen mixed vegetables, thawed
- 1 onion, chopped
- 1 tsp pepper, divided
- ¾ cup less sodium beef broth
- 2 (12-oz) pkg refrigerated roasted garlic and herb mashed cauliflower
- ½ (24-oz) pkg refrigerated mashed potatoes
Instructions
- Cook beef in a large skillet over medium-high heat 2 minutes. Add mixed vegetables, onion, and ½ tsp pepper; cook 8 minutes or until beef is done and vegetables are tender. Drain, if needed.
- Add broth; cook 3 minutes or until thickened.
- Meanwhile, heat cauliflower and potatoes according to package directions; stir together cauliflower, potatoes, and ½ tsp pepper. Serve beef mixture over cauliflower mixture.
