Shepherd's Pie Mashed Potatoes

Ingredients

  • 2 lb lean ground beef
  • 2 (12-oz) pkg frozen mixed vegetables, thawed
  • 1 onion, chopped
  • 1 tsp pepper, divided
  • ¾ cup less sodium beef broth
  • 2 (12-oz) pkg refrigerated roasted garlic and herb mashed cauliflower 
  • ½ (24-oz) pkg refrigerated mashed potatoes

Instructions

  1. Cook beef in a large skillet over medium-high heat 2 minutes. Add mixed vegetables, onion, and ½ tsp pepper; cook 8 minutes or until beef is done and vegetables are tender. Drain, if needed.
  2. Add broth; cook 3 minutes or until thickened.
  3. Meanwhile, heat cauliflower and potatoes according to package directions; stir together cauliflower, potatoes, and ½ tsp pepper. Serve beef mixture over cauliflower mixture.
