Tuscan Garlic Butter Chicken

Ingredients
- ¾ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- 1 Tbsp butter
- 2 cloves garlic, minced
- ½ cup chopped onion
- 3 Tbsp white wine
- ½ cup heavy cream
- ¼ cup thinly sliced sun dried tomatoes
- 1 cup organic baby spinach
- ¼ cup freshly grated Parmesan cheese
Instructions
- Cook chicken in hot oil in a large skillet over medium-high heat 5 to 7 minutes per side or until done. Remove chicken from skillet, and set aside.
- Melt butter in skillet; add garlic, onion, and wine. Simmer over medium-high heat until fragrant. Reduce heat to low, and add cream. Return to a simmer, stirring occasionally. Add tomatoes, spinach, and cheese.
- Return cooked chicken to skillet; spoon sauce over each chicken breast. Serve over Buttery Linguine recipe.

- 2 oz linguine
- 1 Tbsp butter
- 2 Tbsp chopped fresh parsley
- ½ tsp Italian seasoning
- ¼ tsp salt
Side Dish Instructions
- Cook linguine according to package directions. Toss with butter, parsley, Italian seasoning, and salt until butter melts. Serve hot.
