Crunchy Ramen Noodle Slaw with Oranges

Ingredients

  • 2¼ lb salmon fillets
  • ½ cup sweet chili sauce
  • 1 Tbsp sesame oil
  • ¼ tsp crushed red pepper
  • 1 green onion, sliced

Instructions

  1. Preheat broiler. Place fish, skin sides down, on a lightly greased foil-lined baking sheet.
  2. Stir together chili sauce, sesame oil, and red pepper; brush on fillets.
  3. Broil 6 to 10 minutes, depending on thickness of fish, or until fish flakes with a fork. Let stand 5 minutes. Sprinkle with onion.

Side Dish Ingredients

  • 2 (3-oz) pkg ramen noodles
  • 1 Tbsp butter, melted
  • 1 (16-oz) pkg tricolor coleslaw
  • 1 (10-oz) pkg shredded carrots
  • 1½ cups drained mandarin oranges in juice
  • 2 green onions, sliced
  • ¾ cup sesame ginger dressing

Side Dish Instructions

  1. Preheat oven to 425°F. Discard seasoning packets from ramen noodles. Break noodles into small pieces, and spread onto a baking sheet. Drizzle with melted butter.
  2. Bake 6 to 8 minutes or until toasted.
  3. Toss together coleslaw, carrots, oranges, onions, and ramen noodles in a large bowl. Add dressing; toss. Serve immediately.
