Orange Marmalade Chicken
Orange-Olive Salad and French Bread

Ingredients
- 1½ lb boneless, skinless chicken thighs
- ¼ tsp salt
- ¼ tsp pepper
- 2 Tbsp olive oil
- ⅔ cup natural orange marmalade
- 3 Tbsp Dijon mustard
- 1 Tbsp red wine vinegar
Instructions
- Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
- Meanwhile, combine marmalade, mustard, and vinegar in a small saucepan over medium heat; cook 3 minutes or until melted.
- Add marmalade mixture to skillet with chicken, turning to coat chicken.

- ½ (14-oz) French bread
- 2 Tbsp olive oil
- 1 tsp Italian seasoning
- 1 (10-oz) pkg arugula
- 2 oranges, peeled and sliced
- ½ cup halved pitted kalamata olives
- ⅓ cup olive oil vinaigrette
- ¼ cup chopped fresh parsley
Side Dish Instructions
- Preheat broiler. Cut bread in half lengthwise, and place, cut sides up, on a baking sheet. Drizzle with oil; sprinkle with Italian seasoning. Broil 2 to 3 minutes or until toasted.
- Toss together arugula, oranges, olives, vinaigrette, and parsley in a large bowl.
