Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • ¼ tsp salt
  • ¼ tsp pepper
  • 2 Tbsp olive oil
  • ⅔ cup natural orange marmalade
  • 3 Tbsp Dijon mustard
  • 1 Tbsp red wine vinegar

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a large skillet over medium-high heat 5 minutes per side or until done.
  2. Meanwhile, combine marmalade, mustard, and vinegar in a small saucepan over medium heat; cook 3 minutes or until melted.
  3. Add marmalade mixture to skillet with chicken, turning to coat chicken.

  • ½ (14-oz) French bread
  • 2 Tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 (10-oz) pkg arugula
  • 2 oranges, peeled and sliced
  • ½ cup halved pitted kalamata olives
  • ⅓ cup olive oil vinaigrette
  • ¼ cup chopped fresh parsley

Side Dish Instructions

  1. Preheat broiler. Cut bread in half lengthwise, and place, cut sides up, on a baking sheet. Drizzle with oil; sprinkle with Italian seasoning. Broil 2 to 3 minutes or until toasted.
  2. Toss together arugula, oranges, olives, vinaigrette, and parsley in a large bowl.
