Sausage-Blue Cheese Pasta
Ingredients
- 4 oz bow tie pasta
- 2 Italian sausage links, sliced
- 2 tsp olive oil
- 1 small shallot, diced
- ¼ cup heavy cream
- ¼ cup less sodium chicken broth
- ½ cup crumbled blue cheese
- 1 cup spinach
Instructions
- Cook pasta according to package directions.
- Meanwhile, cook sausage in hot oil in a skillet over medium-high heat 6 to 8 minutes or until browned. Remove sausage, reserving drippings in skillet.
- Add shallot to skillet; cook over medium heat 4 minutes or until tender. Add cream and broth; cook 3 to 4 minutes or until thickened. Stir in sausage, cheese, and spinach; cook until spinach wilts. Serve sausage mixture over pasta.
