Chicken with Bacon Sauce

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • 2 slices center cut bacon, chopped
  • ⅓ cup chopped onion
  • 2 tsp minced garlic
  • ¼ cup less sodium chicken broth
  • ½ cup cream of chicken soup
  • 1 green onion, sliced

Instructions

  1. Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 5 to 6 minutes per side.
  2. Meanwhile, cook bacon in another skillet over medium heat 6 minutes or until crisp. Remove bacon from skillet, reserving 2 tsp drippings in skillet. Add onion to drippings in skillet; cook over medium-high heat 5 minutes or until tender. Add garlic; cook 1 minute or until fragrant.
  3. Reduce heat to medium; add broth, scraping pan to loosen browned bits. Stir in soup and bacon; cook 4 minutes or until thoroughly heated. Add chicken to skillet, turning to coat in sauce. Sprinkle with green onion.
