Chicken with Bacon Sauce
Spinach Mashed Potatoes
Ingredients
- ¾ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 tsp olive oil
- 2 slices center cut bacon, chopped
- ⅓ cup chopped onion
- 2 tsp minced garlic
- ¼ cup less sodium chicken broth
- ½ cup cream of chicken soup
- 1 green onion, sliced
Instructions
- Pound chicken to an even thickness between plastic wrap using a meat mallet. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a skillet over medium-high heat 5 to 6 minutes per side.
- Meanwhile, cook bacon in another skillet over medium heat 6 minutes or until crisp. Remove bacon from skillet, reserving 2 tsp drippings in skillet. Add onion to drippings in skillet; cook over medium-high heat 5 minutes or until tender. Add garlic; cook 1 minute or until fragrant.
- Reduce heat to medium; add broth, scraping pan to loosen browned bits. Stir in soup and bacon; cook 4 minutes or until thoroughly heated. Add chicken to skillet, turning to coat in sauce. Sprinkle with green onion.
