Ingredients

  • 3 lb Brussels sprouts, trimmed and halved
  • 3 Tbsp olive oil
  • 1 cup golden raisins
  • 1 cup toasted walnut halves and pieces, chopped
  • ¼ cup apple cider vinegar
  • 2 Tbsp water
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp lemon zest

Instructions

  1. Cook Brussels sprouts in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until lightly browned.
  2. Reduce heat to medium-low; add raisins, nuts, vinegar, water, salt, and pepper. Cook 5 minutes or until Brussels are tender, stirring occasionally. Sprinkle with lemon zest.
