Asian Chicken-Quinoa Salad

Ingredients

  • ¾ cup quinoa
  • ¼ tsp salt
  • 1 cup frozen shelled edamame
  • ½ (16-oz) pkg tricolor coleslaw
  • 2 (4-oz) mandarin oranges in juice cups, drained
  • 1 red bell pepper, chopped
  • 1½ cups shredded rotisserie chicken
  • ¼ cup sesame ginger dressing
  • ¼ cup salted sunflower kernels

Instructions

  1. Cook quinoa according to package directions; stir in salt. Cook edamame according to package directions.
  2. Toss together quinoa, edamame, and remaining ingredients in a large bowl.
