Mediterranean Pita Pizzas

Ingredients

  • ¾ lb lean ground beef
  • 1½ tsp salt free Greek seasoning
  • 3 pita bread
  • 1 Roma tomato, thinly sliced
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Cook beef in a skillet over medium heat until browned and crumbly; drain, if needed, and return to skillet. Stir in Greek seasoning.
  2. Meanwhile, place pitas on a baking sheet; spray with cooking spray, and bake 5 minutes.
  3. Top each pita with beef, tomato, and cheese. Bake 8 to 10 minutes or until cheese melts.

Side Dish Ingredients

  • ½ (10-oz) pkg chopped romaine lettuce
  • ½ English cucumber, sliced
  • ¼ red onion, thinly sliced
  • ½ (2.25-oz) can sliced black olives, drained
  • ¼ cup light balsamic vinaigrette

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
