Italian Sausage and Spinach Pasta

Ingredients

  • 1 (12-oz) pkg orecchiette pasta
  • 1 (19-oz) pkg mild Italian pork sausage links, casings removed
  • 2 Tbsp minced garlic
  • ¾ cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • 1 (5-oz) pkg baby spinach
  • 1 cup sliced sun dried tomatoes in oil

Instructions

  1. Cook pasta according to package directions; drain and return to pot, reserving ½ cup pasta water.
  2. Meanwhile, cook sausage in a large nonstick skillet over medium-high heat 10 to 12 minutes or until browned and crumbly. Drain, and return to skillet. Add garlic; cook 1 minute.
  3. Add cream and pasta water; simmer 4 minutes or until thickened. Gradually add cheeses, stirring until melted. Gradually add spinach, stirring until wilted.
  4. Add sausage mixture to pasta in pot. Stir in sun-dried tomatoes; toss.
