Ingredients

  • ½ cup pearled farro
  • 2 oz fresh mozzarella cheese
  • 2 cups arugula
  • ¾ cup canned rinsed and drained chickpeas
  • ⅔ cup halved grape tomatoes
  • ⅓ cup pitted green olives
  • 1 oz pepperoni
  • ⅓ cup olive oil vinaigrette

Instructions

  1. Cook farro according to package directions.
  2. Slice cheese, pat dry, and place on paper towels or a kitchen towel to drain. Cut cheese into cubes.
  3. Toss together farro, cheese, arugula, chickpeas, tomatoes, olives, pepperoni, and vinaigrette.
