Ingredients
- ½ cup pearled farro
- 2 oz fresh mozzarella cheese
- 2 cups arugula
- ¾ cup canned rinsed and drained chickpeas
- ⅔ cup halved grape tomatoes
- ⅓ cup pitted green olives
- 1 oz pepperoni
- ⅓ cup olive oil vinaigrette
Instructions
- Cook farro according to package directions.
- Slice cheese, pat dry, and place on paper towels or a kitchen towel to drain. Cut cheese into cubes.
- Toss together farro, cheese, arugula, chickpeas, tomatoes, olives, pepperoni, and vinaigrette.
