Salisbury Steak with Mushroom Gravy

Ingredients

  • ½ lb lean ground beef
  • ¼ cup panko breadcrumbs
  • 2 tsp Worcestershire sauce, divided
  • 1 tsp Dijon mustard
  • 1 tsp tomato paste
  • ¼ tsp pepper, divided
  • 1 Tbsp canola oil
  • 1 cup sliced mushrooms
  • ½ cup sliced onion
  • ¾ cup less sodium beef broth
  • ½ tsp cornstarch

Instructions

  1. Combine beef, breadcrumbs, 1 tsp Worcestershire sauce, mustard, tomato paste, and ⅛ tsp pepper. Shape mixture into 2 patties.
  2. Cook patties in hot oil in a nonstick skillet over medium heat 2 minutes per side or until browned. Remove from skillet; keep warm.
  3. Add mushrooms and onion to skillet; sauté 6 to 7 minutes or until browned and tender.
  4. Whisk together broth, 1 tsp Worcestershire, cornstarch, and ⅛ tsp pepper; add to onion mixture. Return patties to skillet; cover and cook 5 minutes or until done.

Side Dish Ingredients

  • ½ lb red potatoes, cut into chunks
  • 1 small clove garlic, sliced
  • ¼ cup less sodium beef broth
  • 1 Tbsp canola oil, divided
  • ¼ tsp pepper, divided
  • ½ lb broccoli crowns, cut into florets

Side Dish Instructions

  1. Preheat oven to 400°F. Bring potatoes, garlic, and water to cover to a boil in a medium saucepan; reduce heat, and simmer 15 minutes or until tender. Drain; return potatoes and garlic to saucepan.
  2. Add broth, ½ Tbsp oil, and ⅛ tsp pepper to potatoes; mash with a potato masher to desired consistency.
  3. Meanwhile, toss together broccoli, ½ Tbsp oil, and ⅛ tsp pepper on a greased rimmed baking sheet; spread in a single layer.
  4. Roast 15 to 20 minutes or until browned and tender.
