Italian Smothered Chicken

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • ⅓ cup olive oil vinaigrette
  • ¼ tsp garlic powder
  • ¼ tsp pepper
  • ⅓ cup marinara sauce
  • ½ cup shredded mozzarella cheese

Instructions

  1. Place chicken in a medium bowl; add vinaigrette. Chill 5 to 10 minutes.
  2. Remove chicken from marinade; discard marinade. Sprinkle chicken with garlic powder and pepper.
  3. Cook chicken in a nonstick skillet over medium-high heat 3 minutes per side or until browned. Reduce heat to medium. Top chicken with marinara sauce, and cook 8 to 10 minutes or until done, turning once.
  4. Top chicken with cheese; cover and cook 1 minute or until cheese melts.

  • ¾ lb Broccolini
  • 2 tsp canola oil
  • ¼ tsp garlic powder
  • ⅛ tsp salt

Side Dish Instructions

  1. Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer. Bake 6 minutes or until tender, stirring once.
