Italian Smothered Chicken
Quick-Roasted BroccoliniIngredients
- ¾ lb boneless, skinless chicken breasts
- ⅓ cup olive oil vinaigrette
- ¼ tsp garlic powder
- ¼ tsp pepper
- ⅓ cup marinara sauce
- ½ cup shredded mozzarella cheese
Instructions
- Place chicken in a medium bowl; add vinaigrette. Chill 5 to 10 minutes.
- Remove chicken from marinade; discard marinade. Sprinkle chicken with garlic powder and pepper.
- Cook chicken in a nonstick skillet over medium-high heat 3 minutes per side or until browned. Reduce heat to medium. Top chicken with marinara sauce, and cook 8 to 10 minutes or until done, turning once.
- Top chicken with cheese; cover and cook 1 minute or until cheese melts.

- ¾ lb Broccolini
- 2 tsp canola oil
- ¼ tsp garlic powder
- ⅛ tsp salt
Side Dish Instructions
- Preheat oven to 450°F. Toss together all ingredients on a rimmed baking sheet; spread in a single layer. Bake 6 minutes or until tender, stirring once.
