Ingredients

  • ½ lb peeled and deveined, large raw shrimp
  • 1½ Tbsp sweet chili sauce
  • 1½ Tbsp mayonnaise
  • 2 tsp Sriracha
  • 1 tsp honey
  • ½ cup shredded red or green cabbage
  • 4 corn tortillas, toasted
  • 3 Tbsp chopped fresh cilantro

Instructions

  1. Cook shrimp in a skillet coated with cooking spray over medium-high heat 2 to 3 minutes per side or until shrimp are done.
  2. Meanwhile, stir together chili sauce, mayonnaise, Sriracha, and honey in a small bowl.
  3. Divide cabbage and shrimp among tortillas. Drizzle with sauce; sprinkle with cilantro.

  • 1 cup frozen corn kernels
  • 2 tsp olive oil
  • ⅓ cup crumbled cotija cheese
  • 2 Tbsp mayonnaise
  • 2 Tbsp chopped fresh cilantro
  • ⅛ tsp pepper
  • ⅛ tsp salt

Side Dish Instructions

  1. Cook corn in hot oil in a skillet over medium-high heat 6 to 8 minutes or until lightly browned.
  2. Transfer corn to a bowl. Add cheese and remaining ingredients to bowl; toss.
