Chicken Farro Bowls

Ingredients
- ⅓ cup pearled farro
- ½ lb boneless, skinless chicken breasts
- ⅛ tsp salt
- ⅛ tsp pepper
- ½ cup shredded carrots
- ¾ cup canned chickpeas, rinsed and drained
- 3 Tbsp golden raisins
- 3 Tbsp shelled, lightly salted pistachios
- 2 green onions, sliced
- ¼ cup refrigerated lemon vinaigrette
- 2 Tbsp chopped fresh parsley, optional
Instructions
- Cook farro according to package directions.
- Meanwhile, sprinkle chicken with salt and pepper. Cook chicken in a skillet coated with cooking spray over medium-high heat 5 to 6 minutes per side or until done.
- Toss together farro, chicken, carrots, chickpeas, vinaigrette, raisins, nuts, and onions in a large bowl. Sprinkle with parsley, if desired.
