Ingredients

  • ⅓ cup pearled farro
  • ½ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ½ cup shredded carrots
  • ¾ cup canned chickpeas, rinsed and drained
  • 3 Tbsp golden raisins
  • 3 Tbsp shelled, lightly salted pistachios
  • 2 green onions, sliced
  • ¼ cup refrigerated lemon vinaigrette
  • 2 Tbsp chopped fresh parsley, optional

Instructions

  1. Cook farro according to package directions.
  2. Meanwhile, sprinkle chicken with salt and pepper. Cook chicken in a skillet coated with cooking spray over medium-high heat 5 to 6 minutes per side or until done.
  3. Toss together farro, chicken, carrots, chickpeas, vinaigrette, raisins, nuts, and onions in a large bowl. Sprinkle with parsley, if desired.
