Balsamic-Glazed Baked Salmon
Garlicky Broccoli and Cauliflower
Ingredients
- 2¼ lb skinless salmon fillets
- 2 Tbsp balsamic vinegar
- 1 Tbsp Dijon mustard
- 1 Tbsp avocado oil
- 1 tsp dried thyme
- ½ tsp lemon pepper seasoning
- ¼ tsp salt
Instructions
- Preheat oven to 400°F. Arrange fish on a foil-lined baking sheet. Whisk vinegar and remaining ingredients in a small bowl; brush on fish.
- Bake 12 minutes or until fish flakes with a fork.
Side Dish Ingredients
- 1 (12-oz) pkg cauliflower florets
- ½ (12-oz) pkg broccoli florets
- 1 red bell pepper, thinly sliced
- 4 cloves garlic, minced
- ¾ tsp salt
- ¾ tsp pepper
- 2 Tbsp olive oil
Side Dish Instructions
- Sauté cauliflower, broccoli, bell pepper, garlic, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat 3 minutes or until browned.
- Cover, reduce heat, and cook 3 minutes or until crisp-tender.
