Balsamic-Glazed Baked Salmon

Ingredients

  • 2¼ lb skinless salmon fillets
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp Dijon mustard
  • 1 Tbsp avocado oil
  • 1 tsp dried thyme
  • ½ tsp lemon pepper seasoning
  • ¼ tsp salt

Instructions

  1. Preheat oven to 400°F. Arrange fish on a foil-lined baking sheet. Whisk vinegar and remaining ingredients in a small bowl; brush on fish.
  2. Bake 12 minutes or until fish flakes with a fork.

Side Dish Ingredients

  • 1 (12-oz) pkg cauliflower florets
  • ½ (12-oz) pkg broccoli florets
  • 1 red bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • ¾ tsp salt
  • ¾ tsp pepper
  • 2 Tbsp olive oil

Side Dish Instructions

  1. Sauté cauliflower, broccoli, bell pepper, garlic, salt, and pepper in hot oil in a large nonstick skillet over medium-high heat 3 minutes or until browned.
  2. Cover, reduce heat, and cook 3 minutes or until crisp-tender.
