Ingredients

  • 1 red onion, sliced
  • 2 Tbsp olive oil, divided
  • 1 (12-oz) jar sliced roasted red peppers, drained
  • 6 naan 
  • 1 (16-oz) container tzatziki dip
  • 3 cups shredded rotisserie chicken
  • 1 (5-oz) container crumbled feta cheese
  • ½ cup chopped pitted kalamata olives

Instructions

  1. Cook onion in 1 Tbsp hot oil in a large skillet over medium-high heat 5 minutes or until lightly browned and tender. Add roasted peppers; cook 2 minutes or until thoroughly heated.
  2. Meanwhile, preheat broiler. Arrange naan on a large baking sheet; brush with 1 Tbsp oil. Broil 2 minutes or until toasted.
  3. Spread tzatziki dip on naan. Top with chicken, vegetables, cheese, and olives.

  • 1 (10-oz) pkg spinach
  • 1 pint grape tomatoes
  • ½ cup olive oil vinaigrette

  1. Toss together all ingredients in a large bowl.
