Chicken Nugget Mac 'n' Cheese Bake

Ingredients

  • ½ (32-oz) pkg frozen breaded chicken nuggets
  • 2 cups elbow macaroni
  • 4 Tbsp butter
  • 4 Tbsp all purpose flour
  • 2½ cups chicken broth
  • 3 cups shredded white Cheddar cheese, divided 

Instructions

  1. Bake chicken nuggets according to package directions. Cool slightly, and cut into bite-size pieces. Adjust oven temperature to 400°F.
  2. Meanwhile, cook pasta according to package directions.
  3. Melt butter in a large Dutch oven over medium heat; add flour, and cook, stirring constantly, 2 minutes. Stir in broth until mixture is smooth; cook 4 to 5 minutes or until thickened and bubbly.
  4. Stir in 2 cups cheese until melted. Stir in pasta and chicken. Spoon into a greased 2½-quart baking dish; sprinkle with 1 cup cheese.
  5. Bake 15 to 20 minutes or until hot and bubbly.

  • 1 (12-oz) pkg broccoli florets
  • 1 (16-oz) pkg baby carrots
  • 3 Tbsp olive oil
  • 1 Tbsp Italian seasoning

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together all ingredients on a large rimmed baking sheet. Spread in a single layer. Bake 15 to 20 minutes or until vegetables are browned and tender. Season with salt and pepper, if desired.
