Smoky Chicken Chili

Ingredients

  • 1½ lb boneless, skinless chicken thighs
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 (14.5-oz) can diced tomatoes
  • 1¾ cups less sodium chicken broth
  • 3 Tbsp chopped chipotle peppers in adobo sauce
  • 2 tsp ground cumin
  • ½ tsp salt
  • ½ tsp pepper
  • 6 cloves garlic, minced
  • 2 green onions, chopped

Instructions

  1. Combine chicken, onion, bell pepper, tomatoes, broth, chipotle peppers, cumin, salt, pepper, and garlic in a 5- or 6-quart slow cooker.
  2. Cover and cook on LOW 8 hours. Remove chicken, and shred with 2 forks; return to slow cooker. Sprinkle each serving with green onions.

  • 1 English cucumber, chopped
  • 1 pint grape tomatoes, halved
  • ¼ cup thinly sliced radishes
  • 2 Tbsp chopped fresh cilantro
  • 2 Tbsp olive oil
  • 1 Tbsp lime juice
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Toss together all ingredients in a bowl. Cover and chill until ready to serve.
