Peanut Asian Turkey Lettuce Wraps

Ingredients

  • 1 lb ground turkey
  • 1 Tbsp olive oil
  • ⅓ cup creamy peanut butter
  • 1½ Tbsp less sodium soy sauce
  • 1 clove garlic, minced
  • 1 Tbsp minced ginger
  • 1 to 2 tsp Sriracha
  • 8 iceberg lettuce leaves
  • ⅓ cup chopped fresh basil
  • 1 lime, cut into wedges

Instructions

  1. Cook turkey in hot oil in a large skillet over medium-high heat 8 minutes or until turkey is crumbly and no longer pink; keep warm.
  2. Whisk together peanut butter, soy sauce, garlic, ginger, Sriracha, and water as needed to reach desired consistency.
  3. Spoon turkey into lettuce leaves; drizzle with peanut sauce, and sprinkle with basil. Serve with lime wedges.
