Ingredients

  • 2 lb boneless, skinless chicken breasts
  • ½ tsp salt
  • ½ tsp pepper
  • 3 Tbsp olive oil, divided
  • 3 cloves garlic, minced
  • ¾ cup less sodium chicken broth
  • ¾ cup heavy cream
  • 1½ tsp dried thyme
  • 1½ cups grated Asiago cheese

Instructions

  1. Sprinkle chicken with salt and pepper. Cook chicken in 2 Tbsp hot oil in a large skillet over medium-high heat 6 minutes per side or until done.
  2. Meanwhile, cook garlic in 1 Tbsp hot oil in a large skillet over medium-high heat 1 to 2 minutes or until fragrant.
  3. Stir in broth, cream, and thyme; cook 5 minutes or until thickened. Add cheese, stirring until melted. Serve sauce with chicken.

  • 2 (12-oz) pkg halved Brussels sprouts
  • 1 lemon
  • ¼ cup olive oil
  • ½ tsp salt
  • ½ tsp pepper
  • ¾ cup shredded asiago cheese

Side Dish Instructions

  1. Cook Brussels sprouts according to package directions.
  2. Grate zest and squeeze juice from lemon. Whisk together lemon zest, lemon juice, oil, salt, and pepper in a large bowl.
  3. Add Brussels sprouts and cheese; toss.
