Pumpkin Brioche French Toast Sticks

Ingredients

  • 1 (14.1-oz) loaf stale brioche
  • 4 large eggs
  • ⅔ cup milk
  • ½ cup pure pumpkin
  • 2 tsp vanilla extract
  • 1 Tbsp ground cinnamon, divided
  • 1 tsp pumpkin pie spice
  • ¼ cup butter
  • ¼ cup sugar
  • ½ cup pure maple syrup

Instructions

  1. Cut bread into 1-inch-thick slices; cut each slice lengthwise into thirds. Whisk eggs, milk, pumpkin, vanilla, 1 tsp cinnamon, and spice in a shallow baking dish.
  2. Melt butter in a large skillet over medium heat. Combine sugar and 2 tsp cinnamon in a large shallow bowl; set aside.
  3. Dredge bread slices, a few at a time, in egg mixture, thoroughly coating each side, and transfer to hot skillet. Cook bread, in batches, 2 minutes per side or until all sides are golden brown.
  4. Immediately transfer hot French toast sticks to sugar mixture, tossing to coat all sides. Serve with maple syrup.
