Pumpkin Brioche French Toast Sticks

Ingredients
- 1 (14.1-oz) loaf stale brioche
- 4 large eggs
- ⅔ cup milk
- ½ cup pure pumpkin
- 2 tsp vanilla extract
- 1 Tbsp ground cinnamon, divided
- 1 tsp pumpkin pie spice
- ¼ cup butter
- ¼ cup sugar
- ½ cup pure maple syrup
Instructions
- Cut bread into 1-inch-thick slices; cut each slice lengthwise into thirds. Whisk eggs, milk, pumpkin, vanilla, 1 tsp cinnamon, and spice in a shallow baking dish.
- Melt butter in a large skillet over medium heat. Combine sugar and 2 tsp cinnamon in a large shallow bowl; set aside.
- Dredge bread slices, a few at a time, in egg mixture, thoroughly coating each side, and transfer to hot skillet. Cook bread, in batches, 2 minutes per side or until all sides are golden brown.
- Immediately transfer hot French toast sticks to sugar mixture, tossing to coat all sides. Serve with maple syrup.
