Ingredients

  • 1½ lb lean ground beef
  • ½ cup panko breadcrumbs
  • 1 large egg, lightly beaten
  • 2 Tbsp organic ketchup
  • 1 Tbsp Dijon mustard
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 2 Tbsp olive oil
  • 1 onion, halved and thinly sliced
  • 1 (14.5-oz) can less sodium beef broth
  • 1 Tbsp Worcestershire sauce
  • 3 Tbsp arrowroot 

Instructions

  1. Gently mix together beef, breadcrumbs, egg, ketchup, mustard, garlic, salt, and pepper using your hands; shape into 2-inch meatballs.
  2. Brown meatballs all over in 1 Tbsp hot oil in a large skillet, about 5 minutes. Remove meatballs from skillet; add 1 Tbsp oil to drippings in skillet.
  3. Add onion, and cook 6 minutes or until tender. Stir together broth, Worcestershire sauce, and arrowroot; add to onion in skillet, and simmer 2 minutes or until sauce is thickened. Return meatballs to skillet, and cook 2 minutes or until done.

  • 2 (20-oz) pkg frozen mashed cauliflower with olive oil and sea salt
  • 1 clove garlic, minced
  • 1½ lb organic green beans, trimmed
  • 2 Tbsp olive oil
  • ½ cup less sodium chicken broth
  • 2 Tbsp balsamic vinegar

Side Dish Instructions

  1. Cook mashed cauliflower according to package directions.
  2. Sauté garlic and green beans in hot oil in a skillet 2 minutes or until green beans begin to brown; add broth.
  3. Cover and cook 3 minutes or until green beans are tender; uncover and add vinegar. Cook 2 minutes or until liquid is reduced and slightly thickened.
