Sweet Italian Sausages with Peppers and Onions
Brussels Sprouts SaladIngredients
- 2 lean sweet Italian turkey sausage links
- 1 Tbsp olive oil
- 1 (14-oz) pkg frozen organic fajita vegetables, thawed
- 1 clove garlic, minced
- ¾ cup organic diced tomatoes
- ½ tsp Italian seasoning
- ⅛ tsp salt
- ⅛ tsp pepper
Instructions
- Cook sausage in hot oil in a large skillet over medium heat 6 minutes or until browned, turning occasionally; remove from skillet, and keep warm.
- Add vegetables and garlic to skillet; sauté 5 minutes or until tender. Stir in tomatoes, seasoning, salt, and pepper; return sausages to skillet.
- Cover and simmer 8 to 10 minutes or until sausages are done. Cut sausages in half, and serve with vegetables.
Side Dish Ingredients
- ¼ cup chopped pecans
- ½ lb Brussels sprouts, trimmed and shredded
- 1 organic Honeycrisp apple, halved and thinly sliced
- 2 Tbsp unsweetened dried cranberries
- ½ Tbsp apple cider vinegar
- ½ tsp honey
- ½ tsp Dijon mustard
- 1½ Tbsp olive oil
- 2 Tbsp crumbled feta cheese
Side Dish Instructions
- Toast nuts in a dry skillet over medium heat until fragrant. Combine Brussels sprouts, apple, and cranberries in a bowl.
- Whisk together vinegar, honey, mustard, and oil. Add to salad; toss. Sprinkle with cheese and nuts.
