Sweet Italian Sausages with Peppers and Onions

Ingredients

  • 2 lean sweet Italian turkey sausage links
  • 1 Tbsp olive oil
  • 1 (14-oz) pkg frozen organic fajita vegetables, thawed
  • 1 clove garlic, minced
  • ¾ cup organic diced tomatoes
  • ½ tsp Italian seasoning
  • ⅛ tsp salt
  • ⅛ tsp pepper

Instructions

  1. Cook sausage in hot oil in a large skillet over medium heat 6 minutes or until browned, turning occasionally; remove from skillet, and keep warm.
  2. Add vegetables and garlic to skillet; sauté 5 minutes or until tender. Stir in tomatoes, seasoning, salt, and pepper; return sausages to skillet.
  3. Cover and simmer 8 to 10 minutes or until sausages are done. Cut sausages in half, and serve with vegetables.

Side Dish Ingredients

  • ¼ cup chopped pecans
  • ½ lb Brussels sprouts, trimmed and shredded
  • 1 organic Honeycrisp apple, halved and thinly sliced
  • 2 Tbsp unsweetened dried cranberries
  • ½ Tbsp apple cider vinegar
  • ½ tsp honey
  • ½ tsp Dijon mustard
  • 1½ Tbsp olive oil
  • 2 Tbsp crumbled feta cheese

Side Dish Instructions

  1. Toast nuts in a dry skillet over medium heat until fragrant. Combine Brussels sprouts, apple, and cranberries in a bowl.
  2. Whisk together vinegar, honey, mustard, and oil. Add to salad; toss. Sprinkle with cheese and nuts.
