Tomato-Spinach Soup

Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 Tbsp olive oil
- 1 Tbsp Italian seasoning
- ½ tsp crushed red pepper
- 3 cups organic vegetable broth
- 1 (28-oz) can whole peeled organic tomatoes, chopped
- 1 (10-oz) pkg organic baby spinach
- ⅛ tsp salt
Instructions
- Sauté onion and garlic in hot oil in a Dutch oven over medium heat 5 minutes or until tender; stir in Italian seasoning, red pepper, broth, and tomatoes.
- Bring to a boil; add spinach and salt. Reduce heat, and simmer 30 minutes or until soup is slightly thickened.
- Process soup in a blender for a smoother consistency.
Side Dish Ingredients
- 6 Tbsp butter
- 12 slices sandwich bread
- 6 slices Cheddar cheese
- 6 large basil leaves
Side Dish Instructions
- Top 6 bread slices with cheese and basil leaves; cover with 6 bread slices. Cook sandwiches, 2 at a time, in 2 Tbsp melted butter per batch in a large skillet over medium heat until golden and cheese is melted.
