Pork Carnitas Tacos

Ingredients
- 2 lb ground pork
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 2 Tbsp olive oil
- 1 Tbsp tomato paste
- 1 tsp ground cumin
- ¼ tsp salt
- ¼ tsp pepper
- ½ cup less sodium chicken broth
- 12 corn tortillas
- 3 cups shredded lettuce
- 1 (14-oz) carton pico de gallo
- ¼ cup chopped fresh cilantro
- 2 limes, cut into wedges
Instructions
- Cook pork, onion, and garlic in hot oil in a large skillet over medium heat until pork is done and onions are tender. Stir in tomato paste, cumin, salt, and pepper; cook 2 minutes, stirring constantly. Stir in broth, and cook 10 minutes or until thoroughly heated.
- Heat tortillas according to package directions.
- Serve pork in warm tortillas; top with lettuce, pico de gallo, and cilantro. Serve with lime wedges.

- 3½ cups corn kernels
- 2 Tbsp olive oil
- 1 lime
- 3 Tbsp olive oil mayonnaise
- 1 (4-oz) pkg crumbled feta cheese
- 1 organic jalapeño pepper, minced
- ¼ cup chopped fresh cilantro
- ¼ tsp salt
- ¼ tsp pepper
Side Dish Instructions
- Sauté corn in hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned. Transfer to a bowl.
- Grate zest and squeeze juice from lime into corn in bowl. Add remaining ingredients; toss.
