Ingredients

  • 2 lb ground pork
  • 1 yellow onion, sliced
  • 2 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 Tbsp tomato paste
  • 1 tsp ground cumin
  • ¼ tsp salt
  • ¼ tsp pepper
  • ½ cup less sodium chicken broth
  • 12 corn tortillas
  • 3 cups shredded lettuce
  • 1 (14-oz) carton pico de gallo
  • ¼ cup chopped fresh cilantro
  • 2 limes, cut into wedges

Instructions

  1. Cook pork, onion, and garlic in hot oil in a large skillet over medium heat until pork is done and onions are tender. Stir in tomato paste, cumin, salt, and pepper; cook 2 minutes, stirring constantly. Stir in broth, and cook 10 minutes or until thoroughly heated.
  2. Heat tortillas according to package directions.
  3. Serve pork in warm tortillas; top with lettuce, pico de gallo, and cilantro. Serve with lime wedges.

  • 3½ cups corn kernels
  • 2 Tbsp olive oil
  • 1 lime
  • 3 Tbsp olive oil mayonnaise
  • 1 (4-oz) pkg crumbled feta cheese
  • 1 organic jalapeño pepper, minced
  • ¼ cup chopped fresh cilantro
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Sauté corn in hot oil in a large nonstick skillet over medium-high heat 6 to 8 minutes or until browned. Transfer to a bowl.
  2. Grate zest and squeeze juice from lime into corn in bowl. Add remaining ingredients; toss.
