Greek Chicken and Potatoes

Ingredients

  • 2 lb boneless, skinless chicken breasts, halved crosswise
  • 1 (22-oz) pkg frozen red potato wedges with olive oil and garlic 
  • 3 Tbsp olive oil
  • 1 Tbsp Greek seasoning
  • ½ cup shredded Parmesan cheese
  • 1 cup cucumber dill Ranch dressing

Instructions

  1. Preheat oven to 425°F. Place a large rimmed baking sheet in oven while preheating.
  2. Pound chicken to an even thickness between plastic wrap using a meat mallet.
  3. Toss together chicken, potatoes, oil, and seasoning. Carefully arrange chicken and potatoes on hot pan. Bake 20 minutes or until chicken is done and potatoes are browned and tender. Sprinkle with cheese.
  4. Divide chicken and potatoes among 6 plates; serve with dressing for dipping.

  • 2 (12-oz) pkg frozen green beans
  • 2 Tbsp butter
  • 1 tsp Greek seasoning
  • 1 (11-oz) pkg frozen Parker house style yeast rolls

Side Dish Instructions

  1. Cook green beans according to package directions; toss with butter and seasoning.
  2. Bake rolls according to package directions.
