Ingredients
- 1½ cups quick cooking pearled farro
- ½ cup finely chopped fresh basil
- ½ cup chopped fresh parsley
- ¼ cup fresh lemon juice
- 2 Tbsp olive oil
- ½ tsp kosher salt
- ½ tsp pepper
- 2 (15-oz) cans chickpeas, rinsed and drained
- 1 (12-oz) jar marinated quartered artichoke hearts, drained
- ⅓ cup chopped red onion
- ¾ cup crumbled feta cheese
Instructions
- Cook farro according to package directions.
- Whisk together basil, parsley, lemon juice, oil, salt, and pepper in a large bowl. Stir in farro, chickpeas, artichokes, and onion. Sprinkle with cheese.
