Ingredients

  • 1½ cups quick cooking pearled farro
  • ½ cup finely chopped fresh basil
  • ½ cup chopped fresh parsley
  • ¼ cup fresh lemon juice
  • 2 Tbsp olive oil
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 2 (15-oz) cans chickpeas, rinsed and drained
  • 1 (12-oz) jar marinated quartered artichoke hearts, drained
  • ⅓ cup chopped red onion
  • ¾ cup crumbled feta cheese

Instructions

  1. Cook farro according to package directions.
  2. Whisk together basil, parsley, lemon juice, oil, salt, and pepper in a large bowl. Stir in farro, chickpeas, artichokes, and onion. Sprinkle with cheese.
