Ingredients

  • 1½ lb cod fillets
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 lemon
  • 6 Tbsp butter, softened
  • ¼ cup chopped fresh basil
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 400°F. Place fish in a lightly greased baking dish; sprinkle with salt and pepper.
  2. Grate 2 tsp zest from lemon. Combine lemon zest, butter, basil, and garlic; dollop over fish. Squeeze lemon juice over fish.
  3. Bake 10 to 12 minutes or until fish flakes with a fork.

  • 2 zucchini, chopped
  • 2 Tbsp olive oil
  • 2 tomatoes, chopped
  • ½ cup crumbled feta cheese
  • ½ tsp kosher salt
  • ½ tsp pepper

Side Dish Instructions

  1. Cook orzo according to package directions; drain.
  2. Meanwhile, sauté zucchini in hot oil in a large skillet over medium heat 5 minutes or until tender. Remove from heat; stir in tomatoes, orzo, cheese, salt, and pepper.
