Waffle-Crusted Buttermilk Chicken
Parmesan-Pepper Mashed Potatoes and Roasted Green Beans
Ingredients
- 6 frozen waffles
- 1 tsp dried thyme
- 1 tsp salt
- ½ cup buttermilk
- 2 large eggs
- ¼ tsp hot sauce
- 2 lb chicken tenderloins
Instructions
- Preheat oven to 400°F. Toast waffles according to package directions. Break waffles into small pieces, and pulse in a food processor until they resemble coarse crumbs. Add thyme and salt; pulse to combine. Transfer to a shallow dish.
- Whisk together buttermilk, eggs, and hot sauce in a second shallow dish.
- Dip chicken in egg mixture, then dredge in waffle crumb mixture to coat. Place coated chicken on a lightly greased rack on a rimmed baking sheet. Coat chicken with cooking spray.
- Bake 18 to 20 minutes or until chicken is done.

- 2 (12-oz) pkg green beans
- 2 Tbsp olive oil
- 2 (24-oz) pkg refrigerated mashed potatoes
- 1 cup shredded Parmesan cheese
- ½ tsp pepper
Side Dish Instructions
- Preheat oven to 400°F. Toss together green beans and oil on a rimmed baking sheet; arrange in a single layer.
- Bake 15 minutes or until tender and lightly browned; season with salt and pepper, if desired.
- Heat potatoes according to package directions; spoon into a large bowl. Stir in cheese and pepper until blended.
