Waffle-Crusted Buttermilk Chicken

Ingredients

  • 6 frozen waffles
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ cup buttermilk
  • 2 large eggs
  • ¼ tsp hot sauce
  • 2 lb chicken tenderloins

Instructions

  1. Preheat oven to 400°F. Toast waffles according to package directions. Break waffles into small pieces, and pulse in a food processor until they resemble coarse crumbs. Add thyme and salt; pulse to combine. Transfer to a shallow dish.
  2. Whisk together buttermilk, eggs, and hot sauce in a second shallow dish.
  3. Dip chicken in egg mixture, then dredge in waffle crumb mixture to coat. Place coated chicken on a lightly greased rack on a rimmed baking sheet. Coat chicken with cooking spray.
  4. Bake 18 to 20 minutes or until chicken is done.

  • 2 (12-oz) pkg green beans
  • 2 Tbsp olive oil
  • 2 (24-oz) pkg refrigerated mashed potatoes
  • 1 cup shredded Parmesan cheese
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Toss together green beans and oil on a rimmed baking sheet; arrange in a single layer.
  2. Bake 15 minutes or until tender and lightly browned; season with salt and pepper, if desired.
  3. Heat potatoes according to package directions; spoon into a large bowl. Stir in cheese and pepper until blended.
