Potato Chip-Crusted Chicken
Angel Hair Pasta with Herbs and Broccoli
Ingredients
- ⅓ cup Dijon mustard
- ¼ cup butter, melted
- 1 (8-oz) pkg kettle cooked potato chips, crushed
- ½ cup grated Parmesan cheese
- 1½ tsp dried crushed rosemary
- 2 lb boneless, skinless chicken breasts
Instructions
- Preheat oven to 400°F. Whisk together mustard and butter in a shallow bowl. Stir together crushed chips, cheese, and rosemary in a second shallow bowl.
- Cut chicken in half crosswise and pound to an even thickness between plastic wrap using a meat mallet. Brush chicken with mustard mixture; dredge in potato chip mixture, pressing gently to adhere.
- Place coated chicken on a greased wire rack on a rimmed baking sheet. Let stand 20 minutes to set crust. Bake 25 to 35 minutes or until chicken is done and browned.

- 2 (4.8-oz) boxes herb angel hair pasta mix
- 2⅔ cups water
- 1⅓ cups milk
- ¼ cup butter
- 2 (12-oz) pkg broccoli florets
Side Dish Instructions
- Prepare pasta according to package directions, using water, milk, and butter.
- Steam broccoli according to package directions; season with salt and pepper, if desired.
