BBQ Chicken Sweet Potato Stacks

Ingredients

  • 4 large sweet potatoes, cut crosswise into ¼ inch slices
  • 2 Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 3 cups shredded rotisserie chicken
  • ⅓ cup barbecue sauce
  • 1 cup shredded Cheddar cheese
  • ¼ cup sour cream
  • 3 green onions, chopped

Instructions

  1. Preheat oven to 425°F. Toss together potatoes, oil, salt, and pepper on a large rimmed baking sheet; spread in a single layer.
  2. Bake 15 minutes, turning potatoes after 8 minutes.
  3. Meanwhile, stir together chicken and barbecue sauce in a medium bowl.
  4. Arrange potatoes in 6 clusters on baking sheet. Top with chicken mixture and cheese. Bake 5 minutes or until cheese is browned and bubbly. Dollop with sour cream, and sprinkle with onions.

  • 4 slices center cut bacon, chopped
  • 1 small red onion, thinly sliced
  • 1 Tbsp maple syrup
  • 2 tsp Dijon mustard
  • ½ tsp pepper
  • ¼ tsp salt
  • 1 (10-oz) pkg angel hair coleslaw

Side Dish Instructions

  1. Cook bacon and onion in a large skillet over medium heat 6 to 8 minutes or until bacon is crisp. Remove bacon mixture from skillet, reserving drippings in skillet.
  2. Stir in syrup, mustard, pepper, and salt. Add slaw and bacon mixture; toss. Serve warm.
