Broccoli-Cheddar Frittata
Marinated Grape Tomatoes
Ingredients
- 1 (12-oz) pkg broccoli florets
- 1 Tbsp minced garlic
- 1 Tbsp olive oil
- 6 large eggs, lightly beaten
- ¼ cup heavy cream
- ½ cup shredded Cheddar cheese
- ¼ cup chopped roasted red pepper
- ⅛ tsp salt
- ⅛ tsp crushed red pepper
Instructions
- Preheat oven to 375°F. Cook broccoli according to package directions.
- Meanwhile, cook garlic in hot oil in an ovenproof skillet until fragrant. Stir broccoli into garlic in skillet.
- Whisk together eggs, cream, cheese, roasted red pepper, salt, and crushed pepper in a large bowl. Gradually pour over broccoli in skillet.
- Transfer skillet to oven, and bake 20 minutes or until set and beginning to brown.

- 1 cup grape tomatoes, halved
- 3 Tbsp olive oil vinaigrette
- ⅛ tsp pepper

- Combine all ingredients in a bowl. Chill until ready to serve.
