Sheet Pan Roasted Fish, Broccoli, and Tomatoes
Spring Mix with Ranch DressingIngredients
- 3 (5-oz) cod fillets
- 2½ Tbsp olive oil, divided
- 1 tsp Italian seasoning
- ½ tsp salt, divided
- ¼ tsp pepper
- ¾ cup grape tomatoes, halved
- 2 cups broccoli florets
- 2 cloves garlic, minced
- 1 tsp lemon zest
- 1½ Tbsp lemon juice
- 1½ Tbsp butter, melted
- 1½ Tbsp chopped fresh chives
Instructions
- Preheat oven to 425°F. Place fish on a large rimmed baking sheet. Drizzle with 1 Tbsp oil, and sprinkle with Italian seasoning, ¼ tsp salt, and pepper.
- Toss together tomatoes, broccoli, 1½ Tbsp oil, garlic, and ¼ tsp salt in a large bowl. Arrange tomato mixture around fish.
- Bake 15 to 20 minutes or until fish flakes with a fork. Meanwhile, stir together lemon zest, lemon juice, melted butter, and chives; drizzle over fish and vegetables.

- ¼ cup Ranch dressing
