Sheet Pan Roasted Fish, Broccoli, and Tomatoes

Ingredients

  • 3 (5-oz) cod fillets
  • 2½ Tbsp olive oil, divided
  • 1 tsp Italian seasoning
  • ½ tsp salt, divided
  • ¼ tsp pepper
  • ¾ cup grape tomatoes, halved
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • 1½ Tbsp lemon juice
  • 1½ Tbsp butter, melted
  • 1½ Tbsp chopped fresh chives

Instructions

  1. Preheat oven to 425°F. Place fish on a large rimmed baking sheet. Drizzle with 1 Tbsp oil, and sprinkle with Italian seasoning, ¼ tsp salt, and pepper.
  2. Toss together tomatoes, broccoli, 1½ Tbsp oil, garlic, and ¼ tsp salt in a large bowl. Arrange tomato mixture around fish.
  3. Bake 15 to 20 minutes or until fish flakes with a fork. Meanwhile, stir together lemon zest, lemon juice, melted butter, and chives; drizzle over fish and vegetables.

  • ¼ cup Ranch dressing

  1. Toss together spring mix and Ranch dressing in a bowl.
