Lemon Chicken-Broccoli Casserole

Ingredients

  • 2 (14-oz) pkg frozen broccoli florets
  • 4 cups chopped rotisserie chicken
  • 2 lemons
  • 1 (10.5-oz) can cream of chicken soup
  • 1 (8-oz) carton sour cream
  • 3 Tbsp water
  • 1½ tsp curry powder
  • 1½ cups shredded sharp Cheddar cheese
  • ½ cup almond flour
  • ½ tsp garlic salt
  • 1 Tbsp olive oil

Instructions

  1. Preheat oven to 350°F. Steam broccoli according to package directions. Spread in a greased 13- x 9-inch baking dish. Top with chicken.
  2. Grate zest of lemons to measure 2 tsp, and squeeze juice to measure 3 Tbsp.
  3. Whisk together soup, sour cream, lemon juice, water, and curry powder; spread over chicken. Sprinkle with cheese.
  4. Stir together almond flour, garlic salt, oil and lemon zest; sprinkle over casserole.
  5. Bake 30 minutes or until lightly browned.
