Seared Ham Steaks with Apples

Ingredients

  • 2 (1-lb) ham steaks, cut into 6 pieces
  • ½ tsp pepper
  • 2 Tbsp coconut oil
  • 2 Gala apples, sliced
  • 1 onion, sliced
  • ½ cup organic beef broth
  • 1 Tbsp Dijon mustard
  • 1 tsp fresh thyme

Instructions

  1. Sprinkle ham with pepper. Melt oil in a large skillet over medium-high heat. Add ham, and cook 3 minutes per side; remove from skillet, and keep warm.
  2. Add apples and onion to skillet; reduce heat to medium. Sauté 5 minutes or until browned and tender.
  3. Return ham to skillet; add broth, mustard, and thyme. Simmer over medium heat 5 minutes or until liquid is slightly thickened.

Side Dish Ingredients

  • 1½ lb Brussels sprouts, trimmed
  • 1 Tbsp coconut oil
  • 2 cloves garlic, minced
  • 3 Tbsp apple cider vinegar
  • ½ tsp salt
  • ½ tsp sodium free lemon pepper seasoning

Side Dish Instructions

  1. Thinly slice Brussels sprouts. Melt oil in a large nonstick skillet over medium heat; add garlic and Brussels sprouts. Cook 2 minutes, stirring constantly.
  2. Add vinegar, salt, and lemon-pepper. Cook 5 to 7 minutes or until vinegar is evaporated.
