Herb Chicken Salad

Ingredients

  • ¾ lb boneless, skinless chicken breasts
  • 1 Tbsp olive oil
  • ¼ tsp salt, divided
  • ¼ tsp pepper, divided
  • ¼ cup mayonnaise
  • 2 Tbsp chopped fresh parsley
  • 1 Tbsp lemon juice
  • 1 Tbsp chopped fresh basil

Instructions

  1. Preheat oven to 375°F. Place chicken in a small baking dish; drizzle with oil, and sprinkle with ⅛ tsp each salt and pepper.
  2. Bake 24 to 26 minutes or until chicken is done. Cool; shred chicken.
  3. Whisk mayonnaise, parsley, lemon juice, basil, and ⅛ tsp each salt and pepper in a bowl. Add chicken; stir to coat. Chill until ready to serve.

Side Dish Ingredients

  • 2 navel oranges, peeled and sectioned 
  • 2 kiwi, peeled and sliced
  • 1 Tbsp lemon juice

Side Dish Instructions

  1. Toss together all ingredients in a bowl.
