Herb Chicken Salad
Orange and Kiwi Salad
Ingredients
- ¾ lb boneless, skinless chicken breasts
- 1 Tbsp olive oil
- ¼ tsp salt, divided
- ¼ tsp pepper, divided
- ¼ cup mayonnaise
- 2 Tbsp chopped fresh parsley
- 1 Tbsp lemon juice
- 1 Tbsp chopped fresh basil
Instructions
- Preheat oven to 375°F. Place chicken in a small baking dish; drizzle with oil, and sprinkle with ⅛ tsp each salt and pepper.
- Bake 24 to 26 minutes or until chicken is done. Cool; shred chicken.
- Whisk mayonnaise, parsley, lemon juice, basil, and ⅛ tsp each salt and pepper in a bowl. Add chicken; stir to coat. Chill until ready to serve.
Side Dish Ingredients
- 2 navel oranges, peeled and sectioned
- 2 kiwi, peeled and sliced
- 1 Tbsp lemon juice
Side Dish Instructions
- Toss together all ingredients in a bowl.
