Cranberry-Maple Baked Chicken

Ingredients

  • ⅓ cup fresh cranberries
  • 1 Tbsp olive oil
  • 1 Tbsp maple syrup
  • 1 Tbsp balsamic vinegar
  • ¼ tsp salt, divided
  • 1 clove garlic, halved
  • ¾ lb boneless, skinless chicken breasts
  • ½ tsp dried thyme
  • ½ tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F. Process cranberries, oil, syrup, vinegar, ⅛ tsp salt, and garlic in a food processor until pureed, scraping sides as needed.
  2. Sprinkle ⅛ tsp salt over chicken. Place in a small baking dish; pour cranberry mixture over chicken. Sprinkle with thyme and Italian seasoning. Bake 20 minutes or until chicken is done.

  • 1 clove garlic, minced
  • ½ Tbsp olive oil
  • 1 (5-oz) pkg baby spinach
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • ¼ cup chopped walnuts

Side Dish Instructions

  1. Cook onion and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until onion is lightly browned.
  2. Add spinach, salt, and pepper; cook 2 to 3 minutes or until spinach wilts. Top with nuts.
