Cranberry-Maple Baked Chicken
Sautéed Spinach
Ingredients
- ⅓ cup fresh cranberries
- 1 Tbsp olive oil
- 1 Tbsp maple syrup
- 1 Tbsp balsamic vinegar
- ¼ tsp salt, divided
- 1 clove garlic, halved
- ¾ lb boneless, skinless chicken breasts
- ½ tsp dried thyme
- ½ tsp Italian seasoning
Instructions
- Preheat oven to 375°F. Process cranberries, oil, syrup, vinegar, ⅛ tsp salt, and garlic in a food processor until pureed, scraping sides as needed.
- Sprinkle ⅛ tsp salt over chicken. Place in a small baking dish; pour cranberry mixture over chicken. Sprinkle with thyme and Italian seasoning. Bake 20 minutes or until chicken is done.

- ⅓ cup chopped onion
- 1 clove garlic, minced
- ½ Tbsp olive oil
- 1 (5-oz) pkg baby spinach
- ⅛ tsp salt
- ⅛ tsp pepper
- ¼ cup chopped walnuts
Side Dish Instructions
- Cook onion and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until onion is lightly browned.
- Add spinach, salt, and pepper; cook 2 to 3 minutes or until spinach wilts. Top with nuts.
