Spicy Black and White Bean Quinoa

Ingredients

  • 2 cups quinoa
  • 3 Tbsp olive oil
  • 2 Tbsp lime juice
  • 2 cloves garlic, minced
  • 1 Tbsp salt free Southwest seasoning
  • ½ tsp salt
  • 1 (15-oz) can black beans, rinsed and drained
  • 1 (15-oz) can cannellini beans, rinsed and drained
  • 2 tomatoes, diced
  • ½ cup chopped fresh cilantro
  • ⅓ cup diced red onion

Instructions

  1. Cook quinoa according to package directions.
  2. Meanwhile, whisk together oil, lime juice, garlic, seasoning, and salt in a large bowl.
  3. Add quinoa, beans, tomatoes, cilantro, and red onion; toss.
