Spicy Black and White Bean Quinoa
Ingredients
- 2 cups quinoa
- 3 Tbsp olive oil
- 2 Tbsp lime juice
- 2 cloves garlic, minced
- 1 Tbsp salt free Southwest seasoning
- ½ tsp salt
- 1 (15-oz) can black beans, rinsed and drained
- 1 (15-oz) can cannellini beans, rinsed and drained
- 2 tomatoes, diced
- ½ cup chopped fresh cilantro
- ⅓ cup diced red onion
Instructions
- Cook quinoa according to package directions.
- Meanwhile, whisk together oil, lime juice, garlic, seasoning, and salt in a large bowl.
- Add quinoa, beans, tomatoes, cilantro, and red onion; toss.
