Pesto Vegetable French Bread Pizza

Ingredients

  • 1 (12-oz) pkg broccoli florets
  • 2 bell peppers, sliced
  • 1 red onion, thinly sliced
  • 1 Tbsp olive oil
  • 1 (14-oz) loaf organic French bread, halved lengthwise
  • ¾ cup pesto
  • 1½ cups shredded Italian blend cheese
  • 1 cup whole milk ricotta cheese

Instructions

  1. Preheat broiler. Cook broccoli according to package directions. Cool slightly and cut any large florets into smaller pieces.
  2. Meanwhile, cook bell peppers and onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
  3. Spread pesto on cut sides of bread; top with shredded cheese and vegetables. Dollop ricotta over vegetables. Broil 2 to 3 minutes or until toasted and cheese melts. Slice into serving-size pieces.
