Pesto Vegetable French Bread Pizza

Ingredients
- 1 (12-oz) pkg broccoli florets
- 2 bell peppers, sliced
- 1 red onion, thinly sliced
- 1 Tbsp olive oil
- 1 (14-oz) loaf organic French bread, halved lengthwise
- ¾ cup pesto
- 1½ cups shredded Italian blend cheese
- 1 cup whole milk ricotta cheese
Instructions
- Preheat broiler. Cook broccoli according to package directions. Cool slightly and cut any large florets into smaller pieces.
- Meanwhile, cook bell peppers and onion in hot oil in a large skillet over medium-high heat 6 minutes or until lightly browned and tender.
- Spread pesto on cut sides of bread; top with shredded cheese and vegetables. Dollop ricotta over vegetables. Broil 2 to 3 minutes or until toasted and cheese melts. Slice into serving-size pieces.
