Green Chile Chicken

Ingredients

  • ½ lb boneless, skinless chicken breasts
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 tsp olive oil
  • ½ cup diced onion
  • ¼ (4-oz) can mild diced green chiles
  • ⅓ cup less sodium chicken broth
  • 1 Tbsp lime juice
  • ⅓ cup crumbled queso fresco
  • 2 Tbsp chopped fresh cilantro

Instructions

  1. Preheat oven to 375°F. Sprinkle chicken with salt and pepper. Cook chicken in hot oil in a cast-iron or ovenproof skillet over medium-high heat 4 minutes per side or until browned. Remove chicken, reserving drippings in skillet.
  2. Add onion to drippings in skillet; cook over medium-high heat 6 minutes or until lightly browned and tender. Add chiles, broth, lime juice, and chicken to skillet. Transfer skillet to oven.
  3. Bake 15 minutes or until chicken is done. Sprinkle with cheese and cilantro.

  • 2 Tbsp chopped fresh cilantro
  • ⅛ tsp salt
  • ⅛ tsp pepper

Side Dish Instructions

  1. Cook corn in hot oil in a large skillet over medium-high heat 8 minutes or until browned. Stir in cilantro, salt, and pepper.
