Greek Tilapia
Warm Walnut-Feta Spinach Salad
Ingredients
- ¾ lb tilapia fillets
- 1½ Tbsp lemon juice
- 1 Tbsp canola oil
- 1 tsp Worcestershire sauce
- ¾ tsp salt free Greek seasoning
- ⅛ tsp salt
Instructions
- Preheat oven to 350°F. Arrange fish in a lightly greased baking dish. Whisk together lemon juice, oil, Worcestershire, seasoning, and salt; pour over fish.
- Bake, covered, 15 to 20 minutes or until fish flakes with a fork.
Side Dish Ingredients
- ⅓ cup pearled Israeli couscous
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 Tbsp chopped walnuts
- 2 tsp canola oil
- ¼ cup thinly sliced red onion
- 2 tsp red wine vinegar
- 1 tsp Dijon mustard
- 2 cups baby spinach
- 3 Tbsp crumbled feta cheese
Side Dish Instructions
- Cook couscous according to package directions; stir in salt and pepper.
- Meanwhile, toast nuts in hot oil in a skillet over medium-high heat 3 minutes or until fragrant. Add onion; remove from heat.
- Stir in vinegar and mustard. Fold in spinach until slightly wilted. Sprinkle with cheese.
