Spicy Black and White Bean Quinoa

Ingredients
- 1 cup quinoa
- 1½ Tbsp olive oil
- 1 Tbsp lime juice
- 1 clove garlic, minced
- ½ Tbsp salt free Southwest seasoning
- ¼ tsp salt
- ½ (15-oz) can black beans, rinsed and drained
- ½ (15-oz) can cannellini beans, rinsed and drained
- 1 tomato, diced
- ¼ cup chopped fresh cilantro
- ¼ cup diced red onion
Instructions
- Cook quinoa according to package directions.
- Meanwhile, whisk together oil, lime juice, garlic, seasoning, and salt in a large bowl.
- Add quinoa, beans, and remaining ingredients; toss.
