Spicy Black and White Bean Quinoa

Ingredients

  • 1 cup quinoa
  • 1½ Tbsp olive oil
  • 1 Tbsp lime juice
  • 1 clove garlic, minced
  • ½ Tbsp salt free Southwest seasoning
  • ¼ tsp salt
  • ½ (15-oz) can black beans, rinsed and drained
  • ½ (15-oz) can cannellini beans, rinsed and drained
  • 1 tomato, diced
  • ¼ cup chopped fresh cilantro
  • ¼ cup diced red onion

Instructions

  1. Cook quinoa according to package directions.
  2. Meanwhile, whisk together oil, lime juice, garlic, seasoning, and salt in a large bowl.
  3. Add quinoa, beans, and remaining ingredients; toss.
