Pineapple Fried Rice
Vegetable Dumplings with Chili Dipping Sauce
Ingredients
- 1 (16-oz) pkg frozen vegan fried rice
- ½ (12-oz) pkg frozen shelled edamame
- 1 clove garlic, minced
- ½ Tbsp ginger paste
- 1 Tbsp dark sesame oil, divided
- 1 cup diced pineapple
- ½ Tbsp less sodium soy sauce
- 1 tsp natural rice vinegar
- ¼ cup unsalted peanuts
Instructions
- Cook rice and edamame according to package directions.
- Meanwhile, cook garlic and ginger paste in ½ Tbsp oil in a skillet over medium heat 1 minute or until fragrant, stirring often. Add pineapple, and cook 5 to 6 minutes or until tender and lightly browned.
- Stir in cooked rice, edamame, soy sauce, vinegar, and ½ Tbsp oil. Cook 2 minutes or until thoroughly heated. Sprinkle with nuts.

- 1 (9-oz) pkg frozen vegan vegetable dumplings
- ¼ cup vegan Thai sweet red chili sauce
- 1 tsp lime juice
Side Dish Instructions
- Cook dumplings according to package directions.
- Whisk together red chili sauce and lime juice in a small bowl; serve with dumplings for dipping.
