Sloppy Joe Meatball Bake

Mashed Potatoes and Steamed Green Beans

Ingredients

  • 2 lb ground beef
  • 1 cup panko breadcrumbs
  • 2 large eggs
  • 2 tsp Italian seasoning
  • 1 (15-oz) can tomato sauce
  • ½ cup ketchup
  • ½ cup chicken broth
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp brown sugar
  • 1 tsp yellow mustard
  • 1 (8-oz) pkg shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F. Stir together beef, breadcrumbs, eggs, and seasoning; season with salt and pepper, if desired. Shape mixture into 1½-inch meatballs.
  2. Place on a lightly greased wire rack over a foil-lined rimmed baking sheet; bake 20 minutes.
  3. Place meatballs in a large skillet; add tomato sauce, ketchup, broth, vinegar, brown sugar, and mustard. Stir until blended. Top with cheese, and bake 20 minutes or until hot and bubbly.

Side Dish Ingredients

  • 1 (32-oz) pkg refrigerated mashed potatoes
  • 2 (8-oz) pkg thin green beans
  • 1 Tbsp butter

Side Dish Instructions

  1. Heat potatoes according to package directions.
  2. Steam green beans according to package directions; toss with butter and season with salt and pepper, if desired.
