Sloppy Joe Meatball Bake
Mashed Potatoes and Steamed Green BeansIngredients
- 2 lb ground beef
- 1 cup panko breadcrumbs
- 2 large eggs
- 2 tsp Italian seasoning
- 1 (15-oz) can tomato sauce
- ½ cup ketchup
- ½ cup chicken broth
- 1 Tbsp apple cider vinegar
- 1 Tbsp brown sugar
- 1 tsp yellow mustard
- 1 (8-oz) pkg shredded mozzarella cheese
Instructions
- Preheat oven to 400°F. Stir together beef, breadcrumbs, eggs, and seasoning; season with salt and pepper, if desired. Shape mixture into 1½-inch meatballs.
- Place on a lightly greased wire rack over a foil-lined rimmed baking sheet; bake 20 minutes.
- Place meatballs in a large skillet; add tomato sauce, ketchup, broth, vinegar, brown sugar, and mustard. Stir until blended. Top with cheese, and bake 20 minutes or until hot and bubbly.

- 1 (32-oz) pkg refrigerated mashed potatoes
- 2 (8-oz) pkg thin green beans
- 1 Tbsp butter
Side Dish Instructions
- Heat potatoes according to package directions.
- Steam green beans according to package directions; toss with butter and season with salt and pepper, if desired.
