Cheesy Barbecue Pork Chop Sandwiches

Ingredients

  • 2 lb thin sliced boneless pork chops
  • 2 Tbsp olive oil
  • 1 cup barbecue sauce, divided
  • 6 slices Cheddar cheese
  • 6 soft pretzel hamburger buns, split and toasted

Instructions

  1. Season pork with salt and pepper, if desired. Cook pork in hot oil in a large cast iron skillet over medium-high heat, 2 to 3 minutes per side or to desired doneness.
  2. Brush pork with ½ cup sauce and top each with 1 slice cheese; cover, and let stand until cheese is melted.
  3. Serve cheesy pork chops on buns with remaining barbecue sauce.

  • ½ cup mayonnaise
  • 2 tsp apple cider vinegar
  • 1 tsp honey
  • 1 (16-oz) pkg tri color coleslaw
  • 2 Gala apples, chopped
  • 1 (8-oz) bag potato chips

Side Dish Instructions

  1. Whisk together mayonnaise, vinegar, and honey in a large bowl. Add coleslaw and apples; toss. Season with salt and pepper, if desired.
  2. Serve chips on each plate.
