Homestyle Beef and Bean Soup

Ingredients
- 1½ lb ground beef
- 1 cup chopped onion
- 2 Tbsp minced garlic
- 1 (14.5-oz) can diced tomatoes with basil, garlic, and oregano
- ½ (16-oz) pkg crinkle cut carrots
- 1 (32-oz) carton less sodium beef broth
- 2 tsp Italian seasoning
- 1 (15-oz) can cannellini beans, rinsed and drained
- 3 cups baby spinach
- 1 cup freshly grated Parmesan cheese
Instructions
- Cook beef, onion, and garlic in a Dutch oven over medium heat until beef is browned and crumbly. Drain and return to pot.
- Add tomatoes, carrots, broth, and seasoning; bring to a simmer. Cook 10 minutes.
- Add beans and spinach; cook just until thoroughly heated. Sprinkle each serving with cheese.
